Fish sauce, a very common, rustic condiment but so associated and similar with daily life that it becomes indispensability in Vietnamese cuisine.
Phu Quoc fish sauce is famous for high protein (36o-40o), soft sweet taste and fragrance of anchovies, the fish species found only in Phu Quoc. The longer the fish sauce is kept, the better it will taste.
At present, Phu Quoc has about 100 fish sauce manufacturers with estimated production is about 10 million liters/per year. Duong Dong and An Thoi are 2 places producing the most fish sauce on the island.
The pure fish sauce is dark brown, clear and viscid. The fishermen or divers often a small bowl of sauce fish to warm the body before walking into the sea in cold weather. Especially, the excess drink could make you drunk. The hosts often use this kind of fish sauce for special guests.
